Every so often I’ll get a craving for a rice krispie treat. They’re buttery marshmallow goodness and they always remind me of my childhood because it was my mother’s go-to treat for all of the bake sales at school.
For me, rice krispie treats are just one of those simple, nostalgic and classic snacks that have never failed to please. They’re also one of the easiest sweets to elevate and turn into what feels like something über gourmet.
Recently, I added Nutella and chopped hazelnuts to a batch and I honestly wondered why it took me so long to discover this creation.
I finally get to post again! I’ve been M.I.A. lately because my kitchen has been out of commission. There was a tile backsplash project that was started almost two weeks ago and was just completed over the weekend. Let me tell you that I’m happy to have my kitchen back and I was very excited to bake again. It’s true what they say about home improvements and things taken for granted: they always take much longer than you think and you only miss it once it’s gone.
The entirety of last week was spent pining for my oven and daydreaming about baking one of my mother’s favorite cookies (maybe it had a little something to do with Mother’s Day). She loves anything crispy and crunchy. Over baked cookies, the outermost brownie edges, and thin wafers are some of her favorites.
I must admit that I haven’t made these in a while and I’m not entirely sure why. I tried them for the first time last year and they were a huge hit within my circle of friends. One friend who really enjoyed them was celebrating his birthday this week and I knew my mission was to make this fun treat to accompany his gift.
Some would say that he’s an odd duck since he prefers his sweets to be of the non-chocolate variety and I can relate to that. The best way to describe these bars: they’re elevated Rice Krispie treats. They don’t contain a lick of chocolate, but they have a richer taste from the extra butter and the extra time spent browning the butter.
